Today, Heaven Hill Distilleries produces three different spirits: bourbon with wheat as an additional grain ("Old Fitzgerald"), bourbon with rye ("Evan William") and rye whiskey ("Rittenhouse Rye").

There are several versions of the origin of the name bourbon. One of the options is by the name of the territory in Virginia, named after the French royal Bourbon dynasty, which helped the United States in the war against England. The second option is by the name of the territory of Fayette, neighboring the Elijah Craig plant, named in honor of Gilbert du Motier, Marquis de Lafayette, who was a member of the Bourbon dynasty. By the end of the 18th century, there were dozens, if not hundreds, of distilleries producing various types of whiskey in these and surrounding territories. Therefore, to distinguish whiskey made from corn from traditionally made from rye and wheat, giving the name bourbon.

The composition of Elijah Craig bourbon must include 51% corn, and the rest consists of various varieties of wheat. The alcohol strength during distillation should be no more than 80%. A significant difference between bourbon is the absence of a grain malting stage. Basically, the wine material after distillation is filtered through maple charcoal. The bourbons of Elijah Craig brand is aged in barrels for 8-12 years. During this time, about 2/3 of the total volume goes to the angel's share, and the remaining part is bottled with a preliminary measurement of the strength. Its value should not exceed 47%.
